Grandma's Strawberry Rhubarb Pie

Growing up, every time we visited Alaska, my Grandma would make us this pie maybe once a week. It is made special with rhubarb and Alaskan strawberries from her garden, but what you find at the farmers market will probably be fine too. Alaskan strawberries are smaller and pink and have more of a subtle sugary flavor and are less tart.

  • Mix together 2 cups of diced rhubarb, 2 cups of sliced strawberries, 2 eggs, 7 saltines, and 1/2 cup granulated sugar. 
  • Put a pie crust in a round 9" pan and fill with mixture.
  • Bake at 350 degrees for 50 minutes.
  • Top with homemade whipped cream or vanilla ice cream to serve.
