Chocolate Chip Cookies (you can eat for breakfast)

These cookies are "healthy" with no refined sugar (except in the chocolate) or butter, but they don't have that "healthy" taste that no one actually likes.
  • 2 cups of almond flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/4 cup melted coconut oil
  • 1/4 cup good quality honey 
  • 1 tsp pure vanilla extract
  • 1 cup dark chocolate chips
  1. Preheat oven to 350 degrees.
  2. Mix together flour, salt, and baking soda.
  3. Mix together coconut oil, honey, and vanilla. You may have to slightly warm the honey to get it to mix well, but if it is not fully mixed... it will get mixed when you add to the flour.
  4. Add the wet to the dry and.. mix!
  5. Add the chocolate chips.
  6. Form in to balls about the size of a golf ball. Put on a parchment paper lined baking sheet. Press the balls to flatten slightly.
  7. Bake for 8-10 minutes on the center rack until the bottom of the cookies is slightly browned. The top will be squishy and not look done... but let them cool and you will see!
